But it’s at The Long Table at the John Hardy Boutique & Gallery in Seminyak where you can get a taste of a brand new menu. John Hardy Seminyak’s new menu is a contemporary and communal dining experience that celebrates everything the archipelago has to offer, showcasing Indonesia’s culinary heritage and bringing family-style Balinese cooking to the dining table.
This very special multi-course feast honours John Hardy’s commitment to preserving local traditions, by spotlighting ancient recipes and lesser-known ingredients through flavourful dishes designed to share. All of this is served up on the lower level of John Hardy Seminyak’s stunning gallery, overlooking the emerald green lawn and majestic temple. It’s a must-try culinary experience in Bali, full of surprises and delicious spins on local, home-style recipes.
A true taste of Indonesia’s indigenous ingredients
Helmed by Chef Tomy, The Long Table at John Hardy Seminyak is a noble reflection of John Hardy’s long-standing mission to preserve ancient skills and support local communities. The new menu pays homage to ancient culinary techniques and showcases recipes passed down through generations, transforming time-honoured dishes into meticulous, contemporary creations.
Chef Tomy is armed with a wealth of knowledge and years of culinary experience, so he challenges himself and his team to create an innovative menu built around these traditional recipes and ingredients. Beautifully plated, the multi-course sharing menu draws on childhood memories and celebrates the vibrant, lesser-known indigenous ingredients of Indonesia.
Drawing in art enthusiasts, local communities and foodies alike, this new menu proves the value of working closely with nearby communities, making the most of fresh seasonal ingredients and the catch of the day. Chef Tomy sources the freshest ingredients from across the archipelago, honouring local farmers and fishing communities by showcasing their produce on the communal table.
Take a seat at The Long Table
Settle into the breezy, al fresco atmosphere of The Long Table and the experience begins with a seasonal amuse-bouche, served with refreshing ‘holy water’ made from local herbs and flowers. A variety of pickled vegetables and sambal (Indonesia’s famed chilli condiment) are then presented alongside rice and tempeh crackers as clay pots smoulder and sizzle in the background.
The scene is now set for a parade of vibrant local flavours and refined traditional recipes: think grilled Sumatran beef marinated in tangy tamarind and fermented soy, or the flame-kissed catch-of-the-day sourced from a small-scale fishing community. One of our favourites is the traditional “Tum”, where chopped local oyster mushrooms are wrapped in banana leaves and grilled to perfection. For a taste of a traditional dish from Canggu village, don’t miss the Jukut Kelor Mesanten – a hearty broth of coconut milk, cream and moringa leaves, boiled inside a young coconut and served with rice sourced from Bali’s breathtaking Jatiluwih rice terraces.
And to conclude the feast in the most authentic way possible, “Es Campur” marks the end of The Long Table menu, where Indonesia’s beloved shaved ice dessert is prepared table-side in the traditional way, alongside a colourful selection of sweet toppings. Wash it all down with coffee or tea, or try different twists on jamu – Indonesia’s healing herbal elixir.
